Chicken Biryani

Its Christmas time!Very Happy Time to each n everybody,to enjoy eating cakes,sweets n snacks.Hmm what abt chicken biryani? Yummy! i love to prepare chicken biryani on christmas day.So Dear all, now i am adding chicken biryani recipe,try this in holiday season n enjoy!

Ingredients: SMALL CHICKEN, CUT INTO MEDIUM PIECES
3 CUPS OF BASMATI RICE
75 GRAMS PURE GHEE
50 GRAMS REFINED OIL
1 TABLE SPOON RED CHILLI POWDER
2 MEDIUM SIZE ONION FINELY CHOPPED
1-1/2 TABLE SPOON GINGER GARLIC PASTE

SMALL BUNCH OF MINT LEAVES
SMALL BUNCH OF CORIANDER LEAVES
JUICE OF 1 MEDIUM SIZE LEMON
50 GRAMS CURDS
1 TABLE SPOON GARAM MASALA
5 GREEN CHILLES
2 CINNAMON STICKS
2 CARDAMOMS
6 CLOVES
1 TOMATO FINELY CHOPPED

FOOD COLOR(SAFFRON)A PINCH
SALT TO TASTE

Method: WASH THE RICE AND KEEP IT IN WATER FOR SOAKING FOR 20 MIN.


WASH THE CHICKEN PIECES AND DRAIN ALL THE EXCESS WATER.

HEAT OIL & GHEE IN BIG COOKER.ADD CINNAMON,CLOVES,CARDOMOMS,THEN ONION AND FRY TILL MEDIUM BROWN, ADD GINGER GARLIC PASTE, MIX IT WELL, ADD TOMATO AND GREEN CHILLIES, ADD RED CHILLI POWDER MIX IT WELL,ADD MINT AND CORIANDER,MIX WELL, ADD THE CHICKEN PIECES MIX IT WELL AND COOK IT FOR 5 TO 6 MINUTES ON MEDIUM HEAT.
MIX LEMON JUICE WITH CURDS AND FOOD COLOR MIX IT WELL, ADD TO CHICKEN MIX IT WELL. ADD SALT TO TASTE.ADD GARAM MASALA AND COOK IT FOR 5 MINUTES ON LOW FLAME.

NOW ADD 5 CUPS OF WATER, BRING IT TO BOILING, THEN ADD THE SOAKED RICE, (ONLY RICE, DRAIN THE WATER AFTER SOAKING) CLOSE THE LID AFTER 2 WHISTLE KEEP IT ON LOW FLAME FOR 5 MIN.



PUT OFF THE FLAME, AND DO NOT OPEN THE LID FOR ANOTHER 10 MINUTES.

AFTER OPENING THE LID,CAREFULLY MIX THE BIRYANI BEFORE SERVING.

ENJOY IT WITH YOGHURT RAITA


TO PREPARE RAITA,TAKE A CUP OF CURD,ADD LITTLE AMOUNT OF FINELY CHOPPED ONION,CUCUMBER,TOMATO,GREEN CHILLI AND CARROT,PUT SALT AND MIX WELL.

Sorekayi Palya

Sorekayi is called as bottle gourd in english, sorakaya in telugu.I like this vegetable very much. In our place, in karnataka mom used to prepare the famous Bassaru from this vegetable.Who the mannina makalu of karnataka can forget ragiball and bassaru? Ofcourse i will add bassaru recipe the favorite dish of karnataka little later, now here is the recipe of side dish prepared from sorekayi(bottlegourd)it is very easy to prepare and tastes too good with rice, chapati n poori.I learnt this from my sister- in-law, who is good in tamilnadu style cooking.

All you need is

Small size of sorekayi(bottle gourd)outer skin peeled and cutted into small pieces
Mustard half tsp
Jeera half tsp
Split Urad and Channa Dhal 1 tsp
Dry red chillies 2
curry leaves 1 stem
onion 1(thinly sliced)
Sambar Powder 1 tsp
Turmeric a pinch
Salt for taste
oil
Cilantro/grated coconut for garnishing

How to do

Take a pan and add 4-5 tsp of oil and heat it, when the oil is hot, add mustard, when it pops, add jeera, urad n channa dhal, fry it then add dry chillies, curry leaves,onion and fry till the onion turns golden brown color.Then add pieces of sorekayi(bottle gourd)put salt, don't close the lid of pan, just keep on fry it on medium flame, no need of adding water also,when the vegetable is done, add turmeric n sambar powder, mix well for few min and remove from flame n garnish wid cilantro or grated coconut.

Egg Fried Rice

My Friend was asking me to add more recipes of egg dishes.I have lot of them, slowly i will add it here. Now here is the recipe of Egg Fried Rice.It is very easy to prepare and tastes good.This is the only item, i too do, whenever i am running short of time to cook.Try n Enjoy!

Ingredients

1 cup of cooked and cooled rice
1 onion
3 eggs
Half tsp red chilli powder
Turmeric a pinch
Salt for taste
oil

Method to prepare

Put 3-4 tsp of oil in pan and heat it, when it is hot, add thinly sliced onion and fry it, till it turns golden brown in color,then add salt, turmeric , red chilli powder, fry, add eggs and mix it well for few minutes till the egg is done.Now add the rice and mix well and remove from heat.Serve it hot with tomato sauce or potato chips.

Lemon Rice

Long Back when i started to learn cooking, i remember mom made me to prepare lemon rice.Becoz it is very easy to prepare.Now it is one of my favorite dish, and likes to eat daily :)Here is the recipe for lemon rice, prepare and enjoy! Hmm..Don't forget to leave the comments :)


Ingredients:


1 cup of cooked rice(sona masoori)juice of 1 lemonGreen Chillies 4-6Curry leaves 1 stemMustard half tspJeera half tspurad dhal (split)half tspchanna dhal(split)half tspPeanuts 50 gms asafoetida a pinchturmeric a pinchsalt for tasteoil 4-5 tspCilantro for garnishing.


Method to prepare:


Heat oil in a wok,and add mustard when it pops, add jeera,urad n channa dhal,peanuts fry them for few sec and add asafoetida, curry leaves, green chillies , turmeric, salt and lemon juice, fry for few sec and take it away from flame .Now add the cooked rice mix well and garnish wid cilantro.

Cauliflower Pakora

In evening after coming back home tired of working, everyone wishes to have a cup of tea or coffee with some snacks.Sometimes when the weather is bad and feels too cold,we like to have some hot n spicy snack right? So now i am adding cauliflower pakora recipe, which is very easy to prepare and tasty to eat.Try this and leave ur kind comments.

Ingredients:

One small size cauliflower cleaned and broken into big florets.
Half cup of all purpose flour
3 tsp of corn flour
Half tsp of ginger garlic paste
1 tsp red chilli powder
1 egg
food color a pinch
salt for taste
oil for frying


Method to prepare:

Take a bowl add all purpose flour, corn flour,ginger garlic paste,red chilli powder, egg, food color and salt, mix well with little water, and the batter should not be too watery! now add florets to this, mix well and keep aside for 5-10 min.
Heat oil in a pan on medium flame, when it has become hot add one by one florets deep fry and take out.

Hmm now cauliflower pakora is ready to eat! :)

Taste it wid ur favourate sauce or ketchup.

Spicy Omlette

Ingredients: - Eggs, Red onions(Depends On Quantity),Chopped green chillies(depends on spicy you need),Coriander Leaves,Oil and Salt to taste.
Preparation time : - Few minutes
HOW TO PREPARE: - Finely chop the onions,green chillies ,Corainder Leaves each separately and set it aside. Now take a bowl and add the eggs. Then put in the chopped onions, Green chillies,Coariander leaves, Salt to taste and Mix well. Now take a tava and pour 1 teaspoon olive oil and apply evenly on all sides. Then when the oil is well heated pour in the Egg mixture.add some oil over the edge, Cook till one side is done and then flip it over. Cook till golden brown and then remove from flame.Serve Hot ..........Some may need sauces but not for me....Hmmm................Yummy Try it To Taste it N to say "Y---y"
