Ingredients: SMALL CHICKEN, CUT INTO MEDIUM PIECES
3 CUPS OF BASMATI RICE
75 GRAMS PURE GHEE
50 GRAMS REFINED OIL
1 TABLE SPOON RED CHILLI POWDER
2 MEDIUM SIZE ONION FINELY CHOPPED
1-1/2 TABLE SPOON GINGER GARLIC PASTE
SMALL BUNCH OF MINT LEAVES
SMALL BUNCH OF CORIANDER LEAVES
JUICE OF 1 MEDIUM SIZE LEMON
50 GRAMS CURDS
1 TABLE SPOON GARAM MASALA
5 GREEN CHILLES
2 CINNAMON STICKS
2 CARDAMOMS
6 CLOVES
1 TOMATO FINELY CHOPPED
FOOD COLOR(SAFFRON)A PINCH
SALT TO TASTE
Method: WASH THE RICE AND KEEP IT IN WATER FOR SOAKING FOR 20 MIN.
WASH THE CHICKEN PIECES AND DRAIN ALL THE EXCESS WATER.
HEAT OIL & GHEE IN BIG COOKER.ADD CINNAMON,CLOVES,CARDOMOMS,THEN ONION AND FRY TILL MEDIUM BROWN, ADD GINGER GARLIC PASTE, MIX IT WELL, ADD TOMATO AND GREEN CHILLIES, ADD RED CHILLI POWDER MIX IT WELL,ADD MINT AND CORIANDER,MIX WELL, ADD THE CHICKEN PIECES MIX IT WELL AND COOK IT FOR 5 TO 6 MINUTES ON MEDIUM HEAT.
MIX LEMON JUICE WITH CURDS AND FOOD COLOR MIX IT WELL, ADD TO CHICKEN MIX IT WELL. ADD SALT TO TASTE.ADD GARAM MASALA AND COOK IT FOR 5 MINUTES ON LOW FLAME.
NOW ADD 5 CUPS OF WATER, BRING IT TO BOILING, THEN ADD THE SOAKED RICE, (ONLY RICE, DRAIN THE WATER AFTER SOAKING) CLOSE THE LID AFTER 2 WHISTLE KEEP IT ON LOW FLAME FOR 5 MIN.
PUT OFF THE FLAME, AND DO NOT OPEN THE LID FOR ANOTHER 10 MINUTES.
AFTER OPENING THE LID,CAREFULLY MIX THE BIRYANI BEFORE SERVING.

TO PREPARE RAITA,TAKE A CUP OF CURD,ADD LITTLE AMOUNT OF FINELY CHOPPED ONION,CUCUMBER,TOMATO,GREEN CHILLI AND CARROT,PUT SALT AND MIX WELL.
